My Twist on the Burrito Bowl

        

I have recently been asked by our local newspaper to write up my favorite recipe and to answer a few questions about myself. I figured since I was typing this up already; why not share it with you all too. The best part is that it reminds me of Chipotle’s burrito bowl, yummm!!

Serves 4

2 Cups of Quinoa

1 Bell Pepper

1 Onion

1 Package of Chicken

2 Tbsp Coconut Oil

Additional Items (Optional)

2 tbsp Salsa

2 tbsp Guacamole

½ Cup Romaine Lettuce

In a pan bring to a boil 4 cups of water, once boiling add in the 2 cups of quinoa. Turn down to low and let simmer until tender (10-15 minutes). Meanwhile put 2 tablespoons of coconut oil in a pan, turn on medium, and dice the onion, pepper, and chicken. Season to taste; I use red pepper flakes, pepper, garlic powder, chili powder, and a small dash of cayenne pepper. Cook until chicken is cooked through and peppers are tender.  When finished put your quinoa in a bowl, top with onion, peppers, and chicken mixture; top with the additional items if you desire.

What made you decide to start eating healthy?

I began eating healthy a few years ago; I have always somewhat been a healthy eater because of my mom. She’s always been healthy and I pretty much copy everything she does, she’s a pretty amazing role model. I think it’s also satisfying to give my body the nutrients it needs, I’ve only got one, might as well treat it right!

How hard was it to make the commitment to continue to eat healthy?

It’s not hard for me to continue to commit, I’ve been doing it for a while now so it’s just become a part of my life. Yes, every once in a while I’ll eat ice cream but who doesn’t love ice cream! I just make sure to burn it off at the gym.

Do you meal plan? If so, what/how?

I don’t meal plan, I probably should because it would make my life easier. If I did I would make recipes like the one above and eat that for lunch every day that I’m home.

What type of goals do you set for yourself?

I do whatever my fitbit (shop here) tells me to do! So I try to stay within the amount of calories it tells me I can eat to maintain my weight, I take over 10,000 steps each day, I drink a crazy amount of water every day!  My fitbit really keeps me on track. I guess the only goal I set is to get to the gym at least 4 days a week.

Do you prefer organic foods? Why or why not?

Yes and no. I always buy organic canned food like green beans and corn. I buy organic free range chicken and eggs. I buy some organic produce like broccoli and kale. I don’t buy organic bananas or avocados since what I eat is in the middle and I know I’m fine. Organic foods can be much more expensive so sometimes it’s hard for me to wrap my head around the justification.

  1. Hi! I promise I won’t keep commenting but I just saw this! I want to start eating healthier and this was such an inspiration. Is Quinoa like rice or closer to a noodle? I love pasta but I’m unsure on rice. Unless it’s Uncle Ben’s chicken rice 🙂 any other recipes you can share?! Thanks gurlie!

    1. So quinoa is more in the rice family than the noodle. There are so many more health benefits to eating quinoa rather than eating either of the other two options. I try to add as much flavoring (such as peppers and onions) to it as possible because it has more of bland taste when it’s by itself. There are two options, red and white. Both are great, white is a little less grainy I think but everyone’s different! I’ll try to post some more recipes at random, but I will tell you I Pinterest recipes constantly! So try searching there, you’ll find millions of options for every meal and snacks!
