Overnight Oats 

For the past month I have been trying so hard to eat gluten free during the week (weekends are sooo hard, since I’m just starting out, I’m starting out slowwww). My mom is gluten free, so if she is, I can be to, right? The main difference between us is that her will power is WAY better than mine…. Ekk! I bought Bob’s Red Mill gluten free rolled oats knowing I liked overnight oat recipes I’ve tried in the past. I wanted to mix some of the recipes together and try out a new flavor (only putting berries in can get dull); one that I would enjoy and stick to. That’s when I came up with this recipe and I’ve been eating it almost every morning since! It’s amazing!     

PB & J Overnight Oats:

1/2 Tbsp. Chia Seed

1/2 Tbsp. Flax Seed

1/4 C. Gluten Free Rolled Oats

1/2 Scoop Vanilla Protein Powder

1/2 C. Almond Milk

1/2 Tbsp. Almond Butter 

Mix everything together the night before eating. It gets pretty thick throughout the night so I’ll stir in 1/4 cup of almond milk in the morning to help the consistency! 

In the morning I top mine with: 

1 Tsp. Homemade Strawberry Preserves (my mom makes mine 😋)

3-4 Fresh Strawberries- chopped

If you don’t like the seeds I use or you aren’t one to use protein powder, mix in whatever ingredients you do enjoy! You can of course use what ever type of milk you prefer and you don’t have to use gluten free oats! This is a fun recipe to experiment with and you can always change up the ingredients to create new flavors!
